Waldorf Salad: Lunch Or Brunch Salad
A true Waldorf Salad has a blend of fruits and vegetables that is quick and easy to make but a very satisfying side dish. The texture and variety of this dish though can be changed just by substituting a few of your favorites.
(corn, dairy, dye, egg, gluten, peanut, soy free) - 2 Fugi or Gala apples, cut into small cubes
- 2 stalks of celery, sliced
- 1/2 cup pecan halves( omit if you have a nut allergy or replace with 1/4 cup sesame seeds)
- 1/2 cup golden raisins
- 1 tsp. fresh grated lemon juice
- 2 T.homemade mayonnaise
- 1/8 tsp. salt
- 1/2 tsp. granulated sugar
Combine first four ingredients in a medium bowl, stir to mix well. Combine lemon juice, homemade mayonnaise, salt and sugar. Mix well. Pour over apple mixture and combine thoroughly. Serve immediately.
