Vegetable Salad With Quinoa:
A Special Summertime Treat

Vegetable salad with quinoa is used for one of those all in the same plate great summertime salad favorites, try this recipe on a warm summer night. If you desire, add a few pieces of chopped & cooked chicken breast pieces if you prefer some meat included with your meal.

Recipe Book

(corn, dairy, dye, egg, peanut, soy, tree nut free)

  • 1 cup quinoa, dry
  • 2 cups Homemade Chicken Stock
  • 2 cups fresh tomatoes, chopped
  • 2 cups peeled cucumber, seeded and chopped
  • 1 cup celery, chopped
  • 1 cup chopped fresh parsley
  • 1 cup chopped fresh mint
  • 1/2 cup carrots, grated
  • 1/2 cup green onions, sliced
  • 1 garlic clove, minced
  • 1/2 cup lemon juice
  • 1 T. olive oil
  • 1/4 tsp. salt

Rinse grain in medium strainer, drain. Place in 2 qt. saucepan with chicken broth or water and bring to a boil. Reduce heat and simmer covered for 10-15 minutes until liquid is absorbed. Place the grain in a large bowl to cool.

Add chopped tomatoes, cucumber, celery, parsley, mint, carrots, green onions and garlic.

Drizzle the lemon juice and olive oil over salad. Sprinkle with sea salt. Mix to blend flavors.

Chill for at least one hour for flavors to blend before serving.

Makes 8 servings: One serving= 127 calories3 grams fat, 0 grams saturated fat, 21 grams carbohydrates, 121 mg. sodium
