Vanilla Frosting:
Snow Capped Peaks

This vanilla frosting recipe is close to the traditional powdered sugar white frosting recipe, but it has the advantage of being lower in sugar and calories.

Recipe Book

(egg, gluten, peanut, tree nut free)

  • 1 package extra firm silken tofu (12 oz)
  • 1/4 cup sugar
  • 1 tsp fresh lemon juice
  • 1 tsp. butter or margarine
  • 1 tsp. vanilla extract
  • 1 tsp butter flavord extract
  • 1/4 tsp salt
  • 1/4 tsp xanthan gum

Drain tofu thoroughly for at least two hours in a mesh sieve. Discard liquid. Combine all ingredients in a food processor and process until smooth, scraping down sides as needed. Frosts one single layer cake. Use immediately.
