Turkey Vegetable Roll-Up:
With No Bun

A turkey vegetable roll-up is an easy way to reduce your carbs and your calories by serving a quick start to any meal. Vary the vegetables on alternate days to prevent yourself getting bored with the same old flavor.

(corn, dairy(omit cheese), egg, gluten, peanut, soy, tree nut free)

  • 1 tsp. gluten free mustard or mayonnaise
  • dash ground nutmeg
  • 4 slices turkey breast
  • 4 leaves fresh spinach, plus extra for garnish
  • 8 strips red or green bell pepper, (cut into thin strips)
  • 2 string cheese, mozzarella sticks- cut in 1/2

Combine mustard or mayonnaise (or both if desired) with nutmeg. Spread evenly onto turkey slices. Place a leaf of spinach on each, then 1 or 2 pepper strips and the cut cheese.
Start at one edge with the pepper strip and cheese and roll up to the other end. Cut in 1/2 on a diagonal and serve on a spinach leaf if desired. Makes 4 servings.
