Sunbutter Cookies:
On The Menu Forever
As Some Healthy Snacks

Sunbutter cookies taste just like peanut butter cookies without the worry. For the individual with a peanut allergy these healthy snacks are the safe alternative to eating without having to worry about any allergic reaction.

Recipe Book

(gluten, peanut, tree nut free)

Ingredients

  • 1 stick (1/4 lb) unsalted butter
  • 1 cup Sunbutter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp. pure vanilla
  • 1 1/2 cup all purpose Gluten free flour blend
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 1/2 cup your choice dried fruit or semi-sweet chocolate chips

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

Cream the butter and sunbutter together on medium for about 1 minute, scraping sides occasionally.Add the sugar and beat two more minutes, scraping sides occasionally. Add egg, mix one minute. Add vanilla and mix in.

In a separate bowl, mix the flour blend, salt and baking soda. Add this to the butter mixture beating on low until blended. Stir in chocolate chips or dried fruit if desired.

Drop well-rounded tablespoons onto cookie sheet, about 2" apart. Dip fork into a small amount of sugar and press it into the top of each cookie.

Bake in preheated oven for 10 minutes or till edges browned. Remove from oven before they look completely done. The cookie will cook more out of the oven sitting on the hot tray.
