Summer Coleslaw:
Summer's Bountiful Crops

Summer coleslaw is quick by using a combination of summer's fresh vegetables. The result is a pleasing blend of flavors which makes a fresh and tasty coleslaw.

Recipe Book

(Corn, dairy, dye, egg, gluten, peanut, soy, tree nut free)

  • 1 small head of cabbage, chunked
  • 1 medium carrot, in chunks
  • 1 bunch green onions, chopped
  • 2 T. cider vinegar
  • 3 T. fresh lemon juice
  • 1 tsp. honey
  • 2 tsp. ground mustard (grind the seed in a coffee grinder)
  • 1/3 cup canola oil
  • 1/2 tsp. celery seed
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. paprika

In a food processor, combine all ingredients except paprika. Pulse on/off until desired texture is reached. Transfer to serving bowl and chill. Garnish with paprika.

Makes 4 servings One serving= 250 calories, 19 grams fat, 4 grams protein, 20 grams carbohydrates, 410 mg. sodium
