Scrambled Eggs and Spicy Rice:
A Twist On An Old Favorite

Scrambled eggs and spicy rice is a convenient meal which is quick and easy but helps by using up some of those leftovers which always accumulate in the refrigerator. The taste and flavor of this dish can easily be changed just by changing the seasonings and flavor of your rice mix.

Recipe Book

(corn, dye, gluten, peanut, soy, tree nut free)

  • 1/2 cup chopped onion
  • 2 T. olive oil
  • six eggs
  • 1/2 cup half and half milk
  • 2/3 cup cooked spanish rice (or rice of your choice)
  • 1 cup grated cheese( verify soy free)
  • salt and pepper to taste

Saute onion in olive oil until transparent.
In a bowl, beat eggs and milk until foamy. Add rice, cheese and salt and pepper. Pour this mixture into frying pan with onion. Cook over medium heat, stirring frequently, until eggs are set.
