Recipe Book

(dairy, dye, egg, gluten, peanut, and tree nut free- watch carefully and avoid dairy ingredients where needed)

  • 1/4 cup(1/2 stick butter or margarine)
  • 3/4 cup 2% milk(cow, rice or soy)
  • 1 1/4 cups sorghum flour
  • 1/2 cup tapioca flour
  • 2 T. sugar
  • 1 1/2 tsp. cream of tartar
  • 1 tsp xanthan gum
  • 3/4 tsp. baking soda- gluten free
  • 1/2 tsp. salt
  • 1/4 tsp. soy lecithin
  • 1/2 cup diced ham

Preheat oven to 425 degrees. Lightly oil a non-stick baking sheet. In a food processor, blend the butter, milk, flours, sugar, cream of tartar, xanthan gum, baking soda, salt and lecithin. Process just until mixed. Quickly stir in ham. Dough will be soft.Transfer dough to the baking sheet (working quickly so dough does not lose its leavening power). Pat dough into a circle approximately 7-8 inches round and 3/4 inch thick. Bake for 15-18 minutes until browned. Remove from oven and allow to stand for five minutes. Cut into eight wedges to serve.
