Scalloped Potatoes:
One Of Grandma's Best

Scalloped potatoes seem to be a forgotten dish because today's lifestyle seems to be long on desire but short on time. This recipe is quick to put together and get it in the oven for a delicious side dish which can add important fiber and nutrients to your meals.

Recipe Book

(corn, dairy, dye, egg, gluten, peanut and tree nut free)

  • 4 medium russet potatoes, peeled and sliced
  • 3/4 tsp. onion salt
  • 1/4 tsp. pepper
  • 1 T. onion flakes
  • 1/8 tsp. ground nutmeg
  • 1/2 tsp. dried mustard
  • 1 T. canola oil
  • 2 T. potato starch or sweet rice flour
  • 2 cups soy or rice milk
  • 1 T. parmesan cheese(cow, rice or soy cheese)
  • Paprika for garnish

Preheat oven to 350 degrees. Toss potatoes with salt, pepper and onion flakes in 1 1/2 quart casserole or baking dish. Shake remaining ingredients together in a jar and pour over potatoes. Sprinkle with paprika. Bake for 1 hour or until browned.

Makes 4 servings. One serving= 170 calories, 6 grams fat, 6 grams protein, 23 grams carbohydrates, 343 mg. sodium
