The Perfect Food:
Use Rice Crackers For
Some Healthy Snacks

For on the go treats or right at home munchies, Rice Crackers help to fill those "snack attack" feelings of deprivation. Bake up a batch and keep some of these healthy snacks handy when you need a quick pick-me-up before the next meal.

Recipe Book

(dairy, egg, and gluten free)

  • 1 cup rice flour
  • 1/2 tsp. salt
  • 1/2 cup potato starch
  • 1/2 cup margarine(use applesauce or coconut oil for dairy free)
  • 1/2 cup cold water

Preheat oven to 400 degrees. Combine rice flour, salt and potato starch in a mixing bowl. Cut in margarine with pastry blender or fork. Stir in enough cold water to make a soft dough. Place on a lightly oiled baking sheet. Cover with waxed paper and roll out until 1/8" thick. Cut into 48 squares. Bake 10-15 minutes.

For variety add the following before rolling out dough:

  • 1 T. toasted sesame seeds
  • 1 T. toasted poppy seeds
  • 1 T. grated parmesan cheese(do not use for dairy free)

Makes 12 servings: One serving= 4 crackers
137 calories, 2 g. protein, 12 g. carbohydrates, 9 g. fat, 216 mg. sodium
