Raisin Oatmeal Cake:
Moist But Sweet
Snack Finger Food

Raisin oatmeal cake is a delicious treat close to the taste and texture of a dish of baked oatmeal except you can eat it from your hands. With the addition of the raisins the cake stays nice and moist with just a hint of a sweet taste.

Recipe Book

(corn, dairy, dye free)

  • 1 cup hot water
  • 1 cup oatmeal
  • 1/2 cup raisins
  • 1/4 cup vegetable
  • 1/2 cup molasses
  • 2 eggs, beaten
  • 1 cup oat flour or ground oatmeal
  • 3 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 cup chopped walnuts or pecans

Preheat oven to 350 degrees. Pour hot water over oatmeal and raisins. Stir. Add all remaining ingredients. Beat by hand until thoroughly mixed. Pour into lightly oiled 9X5 loaf pan. Bake 45 minutes until lightly browned. Makes 12 servings.
