Potato Knishes:
Remake Of A Traditional Version

Potato Knishes are for the #1 potato fans but you still need to worry about the health consciousness of the regular version. If potatoes are one of your favorite foods, this recipe is close to another form of potato cakes, but better for you. Standard potato cakes are fried in butter or oil- this recipe is baked- not fried. If you so desire, you may add a dip of your choice for additional flavor.

Recipe Book

(dairy,dye, gluten, peanut, soy(verify oil) and tree nut free)

Ingredients- Step one

  • 1 large onion, finely chopped
  • 1/4 cup oil

Ingredients- step two

  • 3 cups cold mashed potatoes
  • 2 eggs, beaten
  • 1/2 cup potato flour
  • salt and pepper to taste

Preheat oven to 400 degrees. Lightly saute and brown the onion with oil in pan until tender.
Thoroughly mix all of the remaining ingredients, then add sauteed onions and mix well.
On a greased baking sheet, line up golf-size round balls. They will be very sticky so use an ice cream scoop to dip out the balls. Bake for 20 minutes.
