Pear Cobbler:
A Summer Seasonal Delight

Summer fruits will be in season and ripening soon. This pear cobbler recipe stars some of the summer's finest. Fresh pick (or shop the local Farmer's Market) to get some of the season's best.

Recipe Book

(corn, dairy, egg, gluten, peanut, tree nut, soy free)

Cobbler Base

  • 4 medium pears, sliced
  • 1/4 tsp. cinnamon
  • dash of cloves
  • dash of nutmeg
  • 2 T fresh squeezed orange juice

Topping

  • 1/2 cup brown rice flour
  • 1 1/2 tsp. baking powder
  • 3T margarine (or dairy substitute)- check label for corn
  • 2-3 T. cold water

Preheat oven to 400 degrees. Lightly oil a casserole dish then line the sides and bottom with pears. Sprinkle on spices. Drizzle all with orange juice. Bake for five minutes while preparing topping.
Combine flour and baking powder in a mixing bowl. Cut in margarine. Add water and stir with fork. Sprinkle crumbled mixture on top of pear slices. Bake another 15 minutes. Cool and serve.

Total Four servings:
Single serving = 202 calories, 2 g protein, 24 g carbohydrates, 12 g fat, 290 mg. sodium
