Using a fork or whisk, beat the eggs and water till frothy. Add the dry ingredients and mix in. Dough must be stiff but workable.(Add more flour or water if necessary) Knead the dough thoroughly on a rice floured board. Roll out as thin as possible. Cut into 1/4 inch wide strips Let dry at least **1 hour. ** Drying time is necessary or noodles will all break into pieces in broth.
