Homemade Breakfast Sausage:
Where's The Meat?

Homemade Breakfast Sausage is an excellent alternative to store bought options, plus you can ensure that your breakfast meat contains no ingredients that may cause allergic or intolerance reactions.

Anytime you have fresh meat, add some seasonings of your choice, form into patties and cook. Experiment to find the right combination of seasonings that are the favorites for your family's tastes.

  • 1 Lb. ground dark turkey, chicken, beef or pork (or combine several varieties if desired)

  • 1/2 tsp. rubbed sage

  • 1/2 tsp each salt and pepper

  • 1/4 tsp. each cinnamon, nutmeg, allspice and fennel seed

  • 1/8 tsp cayenne pepper (optional)

For a sweetened version add one of the following:

  • 1 small apple,unpeeled, finely diced

  • 2T dried cranberries, chopped finely

In a large bowl combine all of the ingredients till well blended. Form the mixture into 15 small balls with well-oiled (olive oil) hands. Flatten to patties. Sauté in olive oil or coconut oil over medium heat approximately 3 minutes per side until cooked through. Serve hot.

Make extra, cook and freeze for later use.

Each Serving: 1 Patty

65 calories, 3g fat, 1g saturated fat, 0g trans fat, 24 mg. cholesterol, 3 g carbohydrate, 106 mg. sodium,1g fiber, 5g protein
