Prepare the grill for cooking. Cut two pieces of heavy-duty foil to make pockets, approximately 16-18" long. Mound the potatoes, onion and garlic in the center of foil. Drizzle with olive oil. Season with salt and pepper or spices of your choice.Pull up two sides and hold together, fold over the top to form a cuff (to lock in juices) then fold down to the top of vegetables. Flatten out the pocket and make a flat package.Grill for 15 minutes, turn and grill for 10 minutes on the other side. Serve directly from foil packets if desired.
