Golden Baked Parmesan Chicken:
A Traditional Party Favorite
Golden baked Parmesan Chicken is easy to assemble, cook in the oven and when it comes out you have a traditional favorite for all the family or guests. Because of allergies, mix and match the right ingredients, and you can easily prepare this by adding or deleting whichever is your troublesome food ingredient. If you are short on time, assemble this the night before and throw it in the oven as soon as you walk in the door from work.
(corn(check label for crumbs), dairy(with df cheese), dye, egg, gluten, peanut, soy, tree nut free) Ingredients - 1/3 cup bread crumbs (check label for corn, dairy, egg and gluten)
- 1/4 cup Parmesan cheese (use non dairy for dairy allergy)
- 1/4 tsp. black pepper
- 1 tsp. garlic powder
- 1/2 tsp onion powder
- 1/4 tsp basil and oregano
- 2 cloves garlic, minced
- 2 T. olive oil
- 4 split chicken breast halves - skins removed
- 1/2 cup homemade spaghetti sauce**
**Homemade Spaghetti Sauce** - 1 can(48 oz) tomato juice
- 3 cans(6 oz each) tomato paste
- 3 T. dried parsley flakes
- 3 T. granulated sugar
- 2 T. dried basil leaves
- 1 T. dried rosemary
- 2 bay leaves
- 2 tsp. dried oregano
- 2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 cup grated Romano or Parmesan cheese(omit for dairy free or use dairy free cheese)
Combine all ingredients except cheese, mix well and simmer on stovetop for 45 minutes to 1 hour. To bake chicken: Preheat oven to 425 degrees. Combine the bread crumbs, parmesan cheese, black pepper, onion and garlic powder, basil and oregano in a wide shallow bowl. Microwave the oil and minced garlic for 30 seconds on high in a small bowl till heated. Dip the chicken into the oil, roll in the breadcrumbs and place on a shallow baking dish sprayed with cooking spray. Bake at 425 degrees for 25 to 30 minutes until juices run clear. Drizzle with pasta sauce before serving.
