Garden Vegetable Pasta Salad:
Mix and Match Fresh Produce
For Some Healthy Snacks

Garden Vegetable Pasta Salad is an ideal way to add some healthy snacks to your diet. Mix and match your favorite combinations to use up some of that fresh from the garden produce. This recipe is so quick and simple but can be easily changed to suit your family's taste by just substituting your ingredients. Shortly, you will find garden vegetable pasta salad has become one of your family's favorite side dishes or lunch time treat.

Recipe Book

(corn, dairy, egg, gluten, peanut, soy, tree nut free)

Vinaigrette

  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • fresh ground pepper, to your tastes
  • 2T red wine vinegar
  • 6 T. olive oil

Vegetable Pasta Salad

  • 1/2 lb. gluten free pasta(confirm corn free)
  • 1 tsp. olive oil
  • 4 celery ribs, sliced
  • 1 large cucumber, seeded and chopped
  • 4-5 large Roma tomatoes(or tomato of your choice)
  • 6 green (spring) onions, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup basil,chopped

Cook the pasta per directions on the package. Drain and rinse with cold water to prevent pasta sticking. Add 1 tsp. olive oil and stir well. Set aside.
Combine all the vinaigrette ingredients in a bowl except olive oil. Whisk this mixture while slowly pouring the olive oil into the bowl. Continue whisking and adding oil at a very slow rate until mixture starts to thicken. Add any remaining oil and blend thoroughly.
Combine the vegetables and spices and stir into the cooled pasta.Drizzle the vinaigrette over the pasta and stir gently till pasta is well coated. Serve cold or at room temperature.
