Fresh Strawberry Pie: A Taste Of Sweet Spring In Homemade Healthy Snacks
During the spring every year fresh strawberry pie is one of the first homemade healthy snacks the whole family looks forward to becoming available in the new season. Use this recipe to showcase their deep red color and beauty. This recipe is a great example of a picture is worth a thousand words.
(dairy, dye, egg, gluten, peanut, soy, and tree nut free) - 1 pre-baked Traditional Pie Crust
- 1 cup pomegranate juice, divided
- 1 (1/4 oz) packet unflavored gelatin
- 1/4 cup organic sugar, maple crystals or date sugar
- 3 cups fresh strawberries, washed and hulled
Whisk together 1/4 cup pomegranite juice and the unflavored gelatin, set aside. Combine remaining juice and sugar in a saucepan and bring to a boil. Add gelatin mixture to hot liquid and turn off heat. Stir occasionally for about five minutes until gelatin has completely melted. Allow gelatin mixture to start to cool until mixture starts to thicken. Place fresh berries in pie crust, arranging attractively and piling high. Pour pomegranate juice over berries to coat. Chill in the refrigerator until gelatin becomes firm.
