Cucumber and Red Onion Salad:
A Cool And Refreshing Treat

Cucumber and Red Onion Salad is great as a summer salad at a picnic or pool party. But it is a tart combination of sweet and sour that combines great to be used as a side dish any time of the year.

Recipe Book

(corn, dairy, dye, egg, gluten, peanut, soy, tree nut free)

  • 1/3 cup cider vinegar
  • 1/3 cup water
  • 2 T. sugar
  • 1/2 red onion, cut in half, thinly sliced
  • 2 cucumbers, peeled if desired, and very thinly sliced
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • chopped fresh dill or 1/4 tsp. dill weed

In a saucepan, heat the vinegar, sugar and red onion until the sugar dissolves. Transfer to a serving bowl, cool and refrigerate.Add cucumbers, salt pepper and dill to the onion mixture. Refrigerate, covered at least 3 hours to blend flavors.Makes 4 servings.
