Cherry Sorbet :
A Better Alternative For
Some Healthy Snacks

This Cherry Sorbet recipe is an easy elegant frozen dessert that can easily be considered some of your healthy snacks recipes. This version can take the place of any bowl of ice cream if you do not prefer to eat the soy alternative from most grocery stores..

(corn, dairy, dye, egg, gluten, peanut, soy, tree nut free)

  • 4 cups sweet cherries( about 1 1/2 lbs.)
  • 1/4 cup sugar
  • 1 cup water
  • 1" strip lemon peel(yellow only)
  • 1/4 tsp. almond extract(check label)
  • optional garnish- mint sprigs or lemon rings

Slice cherries in half and remove pits. Coarsely chop cherries by hand. In a saucepan, combine sugar, water and lemon peel. Bring to a boil and cook for 3 minutes. Remove from heat, remove lemon peel and stir in cherries. Cool. Add almond extract. Chill for 2 hours. Pour mixture into a shallow glass pan, cover with plastic wrap and freeze. When edges start to freeze, remove from the freezer and stir with a large fork, scraping sides also. Repeat this stirring 3-4 times every hour until small ice crystals form. Let sit in freezer and freeze until firm ( at least 3-24 hours depending how hard you desire.)
Sorbet will keep in sealed container for 5 days in the freezer.To serve, scrape the surface and scoop up crystals and place in serving dish. Garnish if desired. Serves 4.
