Birthday Cake For Allergies:
Finding Some Healthy Snacks

Having a birthday cake for allergies can sometimes be difficult. The substitutions you make is what determines whether the final result is some healthy snacks or whether it is allergy safe. Although this cake is free of many of the top common allergens, no birthday cake for allergies is completely safe for everyone. Check your list of ingredients carefully to be certain that there is nothing that will aggravate your personal sensitivity.

Recipe Book

(dairy, dye, egg, peanut, soy(with substitutions) and tree nut free)

  • 1 1/2 cups all purpose flour
  • 1/2 tsp. salt
  • 1 cup sugar
  • 1/4 cup unsweetened cocoa powder(not Dutch cocoa)- use this if you desire a chocolate cake version
  • 1 tsp. baking soda
  • 3 T. vegetable oil*** soy safe oil only or see remarks
  • 2 T. applesauce(or use more vegetable oil)
  • 1 T. white vinegar
  • 1 tsp. vanilla extract
  • 1 cup cold water
  • 1/2 cup semi-sweet chocolate chips, for chocolate cake--verify chips are soy free if soy allergic

***Remarks:Verify your brand of vegetable oil is not made from soybeans: If unsure,contact the manufacturer or substitute in equal amounts any of the following: applesauce, mashed banana, stewed prunes or plain yogurt. These can be used anywhere the recipe calls for vegetable oil

Preheat oven to 350 degrees.
Grease an 8X8 baking pan or line a cupcake pan
In a large bowl, combine flour salt, sugar (cocoa powder if desired) and baking soda. Mix well with fork. Stir in oil, applesauce, vinegar and vanilla extract.
Completely moisten all dry ingredients by stirring and then pour in cold water. Stir until smooth.
Stir in chocolate chips, if desired.
Pour into prepared pan.
Bake in a preheated oven for 30-35 minutes for cake or 20-25 minutes for cupcakes.
