(dairy, egg, and soy free) Cupcakes
Glaze
Preheat oven to 400 degrees. Line 18 muffin cups with baking liners. Coat liners with cooking spray (check soyfree). In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Stir in orange juice, oil, bananas, orange rind and nuts.Divide batter between 18 liners and bake 25 minutes. Cool completely. For the glaze, stir together the confectioner's sugar and orange juice. Spread on cooled cupcakes. Top with sprinkles if you desire.
