Beef Broccoli Stir Fry:
An Old-Time Favorite!

An excellent meal all in one dish with great flavor. Beef Broccoli Stir Fry is a collection of ingredients which are good for your health.For variety you can interchange the broccoli with other favorite vegetables of your choice.

Recipe Book

(dairy, egg, gluten, peanut, soy and tree nut free)

  • 2 T. gluten free soy sauce (or make your own- see below)
  • 1/2 T. arrowroot
  • 1/2 T. cider vinegar
  • 1 T. grated ginger
  • 1/4 tsp. crushed red pepper
  • 2 cloves garlic, minced
  • 12 oz. beef, top sirloin steak
  • 1 bunch broccoli, chopped into florets
  • 2 tsp. olive oil
  • 2 medium carrots
  • 3/4 cup beef stock
  • 4 green onions, chopped
  • 2 cups spaghetti squash

Marinade

In a medium bowl, combine the soy sauce, arrowroot, vinegar, ginger, red pepper and garlic.

Trim fat from meat. Cut meat across the grain into 1/8 inch slices. Add meat to marinade. Toss to coat on all sides. Cover and let stand while you prepare vegetables.

Cut broccoli into florets. Cut stems into 1/4 inch slices.
In a wok or large skillet, heat 1 tsp. of olive oil over medium heat for one minute. Drain meat, discard marinade, add meat to wok and cook and stir approximately 3 minutes until slightly pink.Remove meat from skillet.

Add the remaining oil and stir fry vegetables until crisp tender,approximately 5 minutes. Add broth and meat and simmer while preparing squash.

Summer Squash Preparation

To microwave: Prick squash(about a 4lb size) with a fork to make steam holes. Place on a paper towel in the microwave. Cook on high for 8 minutes. Turn over and cook on high another 7 minutes. Let stand 3 minutes before removing from the oven. Cut and scoop out seeds and shred squash by pulling it out with a fork.

Place the spaghetti squash on a dinner plate and top with the beef broccoli mixture. Serve.

*** Homemade Soy Sauce

  • 8 oz. molasses
  • 3 oz balsamic vinegar
  • sugar to taste
Mix all ingredients together and use like regular soy sauce.
