Basic Sauce:
A Dinner Casserole Basic

Included in this section is an assortment of Basic Sauce recipes that can be used as toppings, starter bases, side dishes, or anywhere you need just that slight extra touch to make a meal extra special.

Recipe Book

Basic Onion Sauce

(corn, dairy, dye, egg, gluten, peanut, soy, tree nut free)

  • 2 large sweet onions, sliced thin
  • 1/4 cup water
  • Dash salt and pepper
  • 4 tsps. olive oil
Pile the onions in a large frying pan. Add water. Cover. Steam for approximately 15-20 minutes until soft. Place in a blender and puree until smooth. Add salt, pepper and oil. Serve.

Makes 2 servings. One serving = 52 calories0 g protein, 4 grams carbohydrates,5 grams fat, 37 mg. sodium

Vegetable Sauce

(corn, dairy, dye, egg, gluten, peanut, soy, and tree nut free)

  • 1 carrot, sliced
  • 1 stalk celery, sliced
  • 3 water chestnuts, sliced
  • 2 T. parsley
  • 2 T. olive oil

Saute the first three ingredients in oil until soft. Add parsley and cook two minutes more.Mix with pasta and serve.

Pesto Sauce

(corn, dairy, dye, egg, gluten and soy free)

  • 2 cups fresh basil
  • 1/2 cup parsley
  • 1/2 cup olive oil
  • 1/4 cup pine nuts
  • 1 clove garlic, optional
  • 1/2 tsp. salt

Place all ingredients in the blender and process until smooth. Serve. (This is a no-cook version) Use approximately 2 T. per batch of noodles- adjust to your tastes. Freeze the balance of sauce and use as needed.

Tomato Sauce

This recipe is excellent for use as a sauce over rice or noodles.

(corn, dairy, dye, egg, gluten, peanut, soy, tree nut free)

  • 32 oz can tomatoes
  • 1 onion, diced (optional)
  • 2 cloves garlic, diced (optional)
  • 1 red or green pepper, diced
  • 2 T. olive oil
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • dash pepper

Bring the tomatoes to a boil in a saucepan. Saute the onion, garlic and peppers in the oil until softened. Add to tomatoes and continue to cook until mixture is slightly thickened. Add spices and cook 5 minutes for flavors to blend.
