Banana Rice Spice Muffins:
Warm Comfort Food
And Healthy Snacks

For a great breakfast treat or some any time of the day healthy snacks, try some Banana rice spice muffins to take that edge off your appetite.

Recipe Book

(dairy, egg, gluten, peanut and tree nut free)

  • 1 ripe banana, cut into 1/4" chunks
  • 1/4 cup vegetable oil
  • 1/3 cup water
  • 1/2 cup sugar
  • 2 cups brown rice flour
  • 3 T. arrowroot powder
  • 1 T. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg

Preheat oven to 400 degrees.
Cream together banana, oil and water. Add sugar. Stir in the rest of the ingredients. Mix well. Spoon into lightly greased muffin cups. Bake 15-18 minutes.
Serves 9 156 calories per muffin
2 grams protein, 24 grams carbohydrates, 6 grams fat, 204 mg. sodium
