Baked Oatmeal Bars: A Possible Tribute To The Name
Healthy Snacks

Free of many major allergens, these baked oatmeal bars are a delicious snack to tuck into lunchboxes or as a breakfast treat. They are quick to assemble if you get your ingredients all staged and on your countertop before mixing is required.

Recipe Book

(dairy free, dye free, egg free**, gluten free, peanut free, soy free*, tree nut free)

    Ingredients

  • 2 cups gluten free oatmeal (not quick-cooking)
  • 1 1/2 tsp baking powder, gluten free
  • 1/2 tsp salt
  • 1 cup lite coconut milk (or fat-free milk of choice)
  • 1 egg**
  • 1/2 cup unsweetened applesauce
  • 1/4 cup Stevia in the Raw
  • 1 1/4 tsp vanilla extract
  • 2 1/2 tsp ground cinnamon
  • 1/2 cup chopped dates (or raisins)

Oven 350 degrees. Oil* an 8X8 inch pan.
Combine all dry ingredients, except dates in food processor and pulse to mix well or stir well by hand. Add liquids and stir in well. Fold in dates or raisins. Pour batter into baking pan. Transfer pan to the oven and bake for 30 to 35 minutes. Cover with foil if it browns too quickly. Remove from oven, allow to sit 3 -5 minutes and cut into squares.

* Use soy free cooking oil
**To replace egg, use flax gel. To prepare, combine 1 T. flax meal with 3 T. hot water. Let sit 5-10 minutes until thickens.
