Amaranth Muffins:
One Flour Blend For Quick Results
To Yield Healthy Snacks

Amaranth flour is quick and easy to use to make healthy snacks... try it in this amaranth muffins recipe. One of the biggest problems with gluten free baking is everyone is unhappy about having to stock and mix so many different flour blends to get good quality results. With this recipe, good results can be obtained with just one type of flour.

Recipe Book

(corn, dairy, egg, gluten, peanut, tree nut free)

  • 2 cups amaranth flour
  • 1/4 cup arrowroot
  • 1 T. gluten free baking powder
  • 1/4 cup sugar
  • 1/3 cup vegetable oil
  • 3/4 cup water

Preheat oven to 350 degrees.
Combine the first four ingredients in a bowl. Stir well. Add the oil and water. Stir until blended. Pour batter into lined muffin cups approximately 2/3 full and bake until tops are browned, approximately 25 minutes.
Makes 8 servings.
1 muffin= 169 calories
3 grams protein, 26 grams carbohydrates, 8 grams fat, 164 mg sodium
